A Firecracker With A Bang

This week I’m going to post some great dinner ideas for your family or for yourself. I went looking for some amazing recipes and delicious food and I found something that anyone would love thanks to this recipe adapted from http://therecipecritic.com/2013/08/firecracker-chicken/

This recipe is similar to sweet and sour chicken but has a little added kick. Not too much kick and not too spicy. So don’t worry, it isn’t going to set your house on fire and you don’t have to be 18 to handle it, but you are going to absolutely love it!

Ingredients

  • ¼ cup canola oil
  • 4 boneless skinless chicken breasts
  • Salt
  • pepper
  • 1 cup cornstarch
  • 2 large eggs, beaten
  • Sauce:
  • ⅓ cup buffalo sauce (if you like more heat use hot sauce, like Frank’s brand)
  • 1¼ cup packed light brown sugar
  • 1 tablespoon water
  • 2 teaspoons apple cider vinegar
  • ½ teaspoon salt
  • ¼ teaspoon red pepper flakes

Instructions

  1. Preheat oven to 325 degrees. Cut chicken breasts into bite-sized pieces and season with salt and pepper.
  2. In separate bowls, place cornstarch and slightly beaten eggs. Dip chicken into cornstarch then coat in egg mixture. I have also found that you can put the cornstarch in a gallon sized bag and shake the chicken to coat.
  3. Heat canola oil in a large skillet over medium-high heat and cook chicken until browned. Place the chicken in a 9 x 13 greased baking dish.
  4. In a medium sized mixing bowl, buffalo sauce, brown sugar, apple cider vinegar, water, salt and red pepper flakes. Pour over chicken and bake for 1 hour.
  5. I stirred the chicken every 15 minutes so that it coated them in the sauce.

Sweet, Spice and Everything Nice

No matter where I go, who I talk to or where I look, everyone loves fried chicken. Rather it’s naked or beaded or boneless or the traditional bone in.

One of my favorite places to go to get wings is the famous Buffalo Wild Wings, also known as “B Dubs.” They offer a variety of wing sauces and you can get them boneless or traditional. My favorite is traditional wings tossed in the Asian zing sweet and spicy chili sauce. It’s finger licking good and it has a kick to it.

The good thing about Buffalo Wild Wings is that you have a variety of sauces to choose from 16 to be exact ranging from mild to extremely hot. If you don’t have a huge appetite and just want a few to satisfy your hunger they offer a small portion size which is about 6 wings for about 8 dollars. A medium size has 12 for about 12 dollars and for those wing lovers with huge appetites, a large portion has 20 wings for about 18 dollars. That’s a winner, winner chicken dinner in my eyes. You have the option to get them with fries with goes great with the sauce of your choice.

Monstrous Burger

For those who love to get down and dirty when it comes to eating monstrous burgers, I have located one of the greatest places in the Midwest that’ll have your taste buds screaming for more and your stomach screaming for less.

If you’re ever in need or wanting a delicious, mouth watering, juicy burger, don’t hesitate to go over to Latawata Creek located in Fairview Heights, Illinois. Latawata Creek is well known for their massive amounts of food for a reasonable price. One burger they do have that I’m going to mention is for the burger and macaroni and cheese lovers.

It’s called the “Fried Mac Daddy Burger.”

It’s a 10 oz. burger topped it with American cheese. Topped with a fried macaroni and Cheese Patty with lettuce , tomato and red onion. It is served with their french fries.

The taste of the burger is amazing and the size is just incredible. The amazing thing about this burger that could last you for two days, is that it’s only $12.79. That’s a price that can’t be beat.
